Slàinte! Healthy Eats for St. Patrick’s Day

Whether you’re Irish or not, it’s always fun to celebrate St. Patrick’s Day. Traditional Irish foods can be heavy and laden with fat, so it can be hard to eat lighter and still celebrate this holiday. To help you plan your menu, here are a selection of healthy eats with Irish staples that include cabbage, corned beef, and potatoes, along with a fine selection of delicious green dishes.

Irish-ish Dishes

Not necessarily traditional, these recipes still give a nod to the classics with a bit of a modern flare.

Stuffed Cabbage Rolls with Beef – You can make these filling rolls ahead of time and freeze some for later.

Reuben Sandwich with Russian Dressing – If you love a classic reuben, you’ll be happy to know we have corned beef in stock.

Irish Bangers and Mash – Sausage (bangers) and mashed potatoes make a heart, simple meal.

Irish Soda Bread – This quick bread marries savory (caraway) with sweet (raisins). Simple and delicious!

Shepherd’s Pie, Lightened Up – This dish is usually heavy and calorie-filled, but here’s a recipe that lighten’s it up without sacrificing flavor.

Colcannon – Ditch the dairy in this lighter version of the cabbage and potatoes dish.

Green Goodness

If you’d simply like to eat something green to commemorate the holiday, these recipes are for you.

Creamy Kale and Pea Soup – Sweep peas lend their creaminess to this fresh-flavored soup.

Green Pizza – Skip the tomato sauce and pour on the green with this veggie-topped pizza.

Orange Glazed Brussels Sprouts – These little cabbage balls are a fun way to acknowledge the Irish history of St. Patrick’s Day and the citrusy glaze adds a nice light flavor.

Spinach and Almond-Stuff Portobello Mushrooms – Serve these cute portobellos with a simple salad for a light, but filling meal.

Avocado Smoothie – Start your day with a bit o’ green by whipping up this rich, sweet drink.
