Super Soups!

The cold weather has settled in. Chase the chill away with simple (and not so simple) soups that will help you warm up. We’ve rounded up some of our favorite soup recipes to inspire you.

 

Veggie Soup – This versatile recipe offers a great base for experimentation. Mix up the veggies, add canned beans and stewed tomatoes, switch up the spices. The variations are only limited by your imagination (and your taste buds).

Tortilla Soup – A bit of crunchy tortilla adds some texture to this South-of-the-Border-inspired soup.

Spicy Pumpkin Soup – Jalapeño offers a spicy contrast to the creaminess of the pumpkin. Pair it with pork roast and warm apple cider to keep the chill at bay.

Wild Rice Mushroom Soup – Delicately flavored with thyme and a little white wine, this soup just gets better the day after.

Farmhouse Bean Soup – At only 30 minutes of cook time, this quick vegetarian soup makes a great weeknight meal that’s loaded with protein and flavor.

Creamy Broccoli Soup – This soup uses the whole broccoli shebang, from floret to stem. Sour cream adds a nice tang, too!

Three Sisters Soup – Corn, squash, and beans (known as the Three Sisters to Native Americans because of the way they can be grown together) combine forces in this creamy vegetarian soup.

Creamy Chicken and Wild Rice Soup – Nutty and soothing, this soup is a great way to feed a cold.

Creamy Carrot and Coconut Milk Soup – Spicy and complex, this soup brings it home with the flavor of an Indian curry.

Veggie Chili with Beer – Fill up on this hearty vegetarian chili along with a side of corn bread (and a beer if that’s your thing).
