Meatless Summer Menu Ideas

While lots of summer menus feature beef, pork, or chicken, there are plenty of fantastic vegan and vegetarian dishes out there filled with both fun and flavor. Whether you are looking for a main dish or a side, give your summer menu a meatless makeover with these recipes.

  1. Chickpea Burgers – These chickpea burgers are similar to falafel, but with the added whole-grain goodness of brown rice and wheat germ.
  2. Grilled Summer Vegetables with Fresh Mozzarella – Grilled vegetables are delicious and easy to cook. Take advantage of summer’s vegetable bounty with this simple recipe.
  3. Vegan Red, White and Blue Potato Salad – This gorgeous potato salad makes a great side to grilled tofu.
  4. Jamaican Bean Burgers – A fabulous bean burger infused with Jamaica’s much loved warming spices and, of course, a bit of heat.
  5. Spicy Roasted Garlic Hummus – The sweet, mellow, nutty flavor of roasted garlic and a little kick from jalapeno offer a delicious twist to this popular Middle Eastern dip.
  6. Garnet Yam Burgers – Sweet potatoes, chickpeas, millet and spices team up for a fabulous burger.
  7. Cucumber Melon Chutney – This chutney makes a fantastic seasonal bruschetta. It’s also a terrific topping for tacos.
  8. Smoky Grilled Tofu and Broccoli – This easy, aromatic, smoky tofu and broccoli relies on a simple marinade to deliver big on flavor.
  9. Orange Chipotle Dressing with Sweet Potato Salad – This dressing combines the sweetness of orange juice and the smoky heat of chipotle for a versatile flavor booster. Try this one on warm roasted potatoes or cooked rice, on shredded cabbage, or on fish or chicken.
  10. Vegan Mayonnaise – Recipe by Robin Asbell – Some aquafaba mayo recipes are made with just aquafaba and oil, with no other base. I like to put in some creamy raw cashews, to give this spread some weight, as well as a little nutrition bonus from the nuts. Be patient as you add the oil; the slow process ensures that the oil and water mixture is fully emulsified, and won’t separate later.
  11. Smoky Grilled Portobello Burger – A mushroom is a perfect food for smoking, since it is porous and spongy by nature. The meaty portobello will shrink and become intensely concentrated as it cooks. Just be careful that you don’t overcook.
  12. Santa Fe Black Bean Salad – A cumin, cilantro and lime dressing gives this easy salad a distinctly Southwestern flavor.
  13. Black Bean and Corn Salad – This Tex-Mex favorite is delicious with grilled fish or burgers, or add diced cooked chicken to create a whole meal.
  14. Grilled Veggies with Smoked Paprika Vinaigrette – Topped with a paprika, fresh basil and Dijon vinaigrette, this grilled veggie salad is bursting with flavor.
  15. Grill-Smoked Tofu Burger – Tofu is like a sponge, soaking up smoke and getting firmer and denser as it sits on the grill. Just keep it on the cool side of the grill and give it plenty of time to get nice and smoky.
